Traditionally, conventional cleaning processes often consist of a 5-step procedure with the process steps: pre-rinse (mostly with return water); caustic (hot); intermediate rinse with fresh water, acid (hot or cold) and post-rinse with fresh water, which is why protein bounded deposits are often removed with difficulty or insufficiently. But if inadequate product removal leaves residues in the heater, re-contamination can occur rapidly due to the growth of new layers, which in the worst case can lead to the development of microbiological contamination. Shorter production times, time-consuming and exorbitant dismantling, manual cleaning work on heat transfer plates and evaporators which often remain inevitable.

In cooperation with the Technical University of Braunschweig, a new technology has been developed to remove extreme ineradicable protein-based residues through synergistic effects of cleaning agents. In the new O&R operating cycle, specific pH ranges are explicitly used to optimise the swelling behaviour of permanent protein-based residues. The microbiological effectiveness of the process compared to the classic 5-step procedure was verified by the accredited service laboratory of the lower saxony chamber of agriculture (LUFA) Nord-West Oldenburg. The validation of the override process was concluded together with the Teaching and research institute for dairy products (LVA) in Malente.
